O reteta din bucataria italiana, un "risotto" din orez salbatic, o reteta destul de clasica dar foarte gustoasa ...
Risotto cu pui si parmezan
Ingrediente:
- 500g orez salbatic;
- 1 ceapa;
- 1/4 telina;
- 4 catei de usturoi;
- ulei de masline;
- 1 pahar de vin;
- 100g unt;
- 100g parmezan;
- 1 litru de supa de pui;
- 1 piept de pui;
- sare de nare;
- piper proaspat macinat;
Puneti pe foc o cratita cu 50 ml ulei de masline si 30 g de unt, tocati marunt ceapa si usturoiul si adaugatile in tigaie, tocati si telina marunt si dupa 2 minute adaugati-o si pe aceasta, lasati sa se caleasca 3-4 minute si adaugati orezul, caliti-l 2-3 minute si adaugati paharul de vin. Asezonati cu sare si piper, dar nu prea mult deoarece mai urmeaza si parmezanul care este sarat. Reduceti pana ce alcoolul s-a evaporat, incepeti sa adaugati din supa cate 2-3 polonice cat sa se acopere orezul. Adaugati supa de cate ori este nevoie pana cand gustati si orezul este facut( in aproximativ 25 minute). La final adaugati restul de unt si parmezanul.
Puiul filetati-l in felii cat mai egale asezonati cu sare, piper si ulei de masline si puneti-l pe gratar. Cand este aproape gata ungeti-l cu unt.
Platingul se poate face fie ca in imagine fie cu inel, o las la imaginatia voastra.

Risotto with Chicken and Parmesan
ingredients:
- 500g wild rice;
- 1 onion;
- 1/4 celery;
- 4 cloves of garlic;
- Olive oil;
- 1 glass of wine;
- 100g butter;
- 100g parmesan;
- 1 liter of chicken broth;
- 1 chicken breast;
- Salt;
- Freshly ground pepper;
Put on a pan to heat with 50 ml olive oil, 30 g butter, chopped onion and garlic to skillet and additional, finely chopped celery and add it after 2 minutes on this, let the carriage 3-4 minutes and add rice, fry it for 2-3 minutes and add the cup of wine. Season with salt and pepper, but not too much because the Parmesan cheese is salty. Reduce until the alcohol has evaporated, begin adding the broth 2-3 ladles enough to cover rice. Add broth as needed until the flavor and the rice is done (in about 25 minutes). Finally add the remaining butter and parmesan. Season.
Chicken slices threaded it as equal, season with salt, pepper and olive oil and place it on the grill. When nearly done brush it with butter.
Plating can be done as shown or with ring, I leave to your imagination.
Serve with lettuce! Bon appetite!
