Piept de rata si orez cu stafide



Astazi va propun o reteta pe cat de usoara pe atat de rafinata! As putea spune ca este una dintre mancarurile mele preferate!!!

Piept de rata si orez cu stafide 

Ingrediente:
- piept de rata(neaparat cu piele);
- sare de mare;
- piper proaspat macinat;
- usturoi;
- cimbru;
- ulei de masline;
- unt;
- stafide;
- orez;
- scortisoara;

Se asezoneaza pieptul de rata cu sare si piper si se pune intr-o tigaie rece la foc mediu, cu partea de piele in jos, pentru ca grasimea din piele sa se elimine treptat, se tine astfel 3-4 minute pe o parte, se intoarce carnea si se adauga 2-3 catei de usturoi zdrobiti in coaja si 2-3 fire de cimbru se tine apoi 3-4 minute pe partea cealalta.




Se introduce tigaia(sau puteti lucra in tavita rotunda de la inceput) pentru 8-10 minute in cuptorul preincalzit la o temperatura de 170-180 grade celsius.  Il scoatem din cuptor si pe un tocator de lemn il lasam sa se odihneasca;
Orezul se fierbe la abur(preferabil in oala speciala), stafidele se hidrateaza timp de 30 minute.
Se incinge tigaia cu 30 ml de unt si 30 ml de ulei de masline, se adauga stafidele si dupa 1-2 minute se adauga orezul, un varf de cutit de scortisoara, sare si piper.
Se serveste cu orezul cu stafide si salata mixta(letuce, iceberg si mar verde)

Duck breast and rice with raisins

Ingredients:
- Duck breast (skin on);
- Sea salt;
- Freshly ground pepper;
- Garlic;
- Thyme;
- Olive oil;
- Butter;
- Raisins;
- Rice;
- Cinnamon;

Season the duck breasts with salt and pepper and place in a cold pan over medium heat, skin side down, because the fat in the skin to eliminate gradually, as you 3-4 minutes on one side, the turn meat and add 2-3 cloves of garlic crushed thyme crust and 2-3 threads are you then 3-4 minutes on the other side.
Place pan (or you can work in the first round tray) for 8-10 minutes in a preheated oven at a temperature of 170-180 degrees Celsius, skin up, take it out of the oven and leave it to rest;
Steam cook rice (preferably in special pot), raisins hydrates for 30 minutes.
Heat pan with butter 30 ml and 30 ml of olive oil, add the raisins and after 1-2 minutes add the rice, a pinch of cinnamon, salt and pepper.
Serve the duck breast with rice and mixed salad (letuce, iceberg and green apple)
